Another day over and here we are.
I was insanely busy at work today. I took off tomorrow to get a couple things done, so I was ripping and running trying to get as much done at work as possible. When I got off…I headed straight to the house. I was suppose to do my swim today but I was beat. I know I probably would have felt great afterwards but that wasn’t even enough to get me there. I’ll try to squeeze it in with my run tomorrow though.
To start the day: yogurt, apple and coffee.
Lunch: leftover extra salad from last night (plus avocado), champagne mango, kiwi and half a DP.
We had our annual Easter “Tube” Hunt at work today. I usually help out hiding the tubes but I was just too busy today. So I missed out on all the excitement. There’s always next year! But I did have a handful of jellybeans that Melissa found.
After work I headed home and hung out with the girls in the greenhouse for a bit. Everything is chugging right along!
The newest sprouts are the hot peppers and parsley! Yay!!
Once I was done out there it was time to make some dinner! And it was delicious tonight!
Another salad with a Mediterranean feel.
- cured green olives
- curry chicken (baked breasts with curry powder and garlic salt)
- lemon juice & olive oil for dressing
The lemon juice made everything taste even fresher. Simple and delicious!!
