It’s Monday. A decent Monday it was though. I was fairly busy, which is always nice. I took my scones to work for some taste tests. They got a thumbs up! Yay! I’m going to make some more in a couple days. I’ll have the recipe then. I had a chunk of one and some coffee for breakfast.

I had a leftover taco roll up for lunch. Sorta. I forgot the refried black beans (and cheese) and was hungry enough that I didn’t want to take time to roll it. So, basically, I had a taco! LOL! With some blackberries on the side.

The day came and went, as most days do. Before I knew it…I was heading home. I played with the pups and checked on the garden when I first got in. Once the girls were munching on a Busy Bone, I started on dinner.

Fish Tacos

I cooked the fish like I did on Friday but I used tilapia instead of cod. I cut the fillets in half, which made then almost the perfect size to put one half on each corn tortilla (some of the pieces are smaller of course).

Toppings

• broccoli slaw
• salsa verde
• salsa
• ranch dressing

I thought about this song while I was cooking dinner. I hadn’t heard it in quite awhile. For whatever reason it popped into my mind (and I may or may not have started singing it to the fur babies). It’s one of my faves!!
