Two For You

It has been quite the Saturday! This is a fairly long post (mostly pictures). It’s been a busy day and I have two recipes for y’all! :lol:

I got up and had a coffee date with my Deon. We went to Starbucks and chilled in their big comfy chairs and chatted for a bit. I got my usual nonfat latte (iced) and a morning bun.

I was going to go get a pedicure after coffee but talked myself into doing them instead and saving my money. :wink:

Deon requested that I make more minestrone soup for him. He really liked it and enjoyed having bowls of in already to go in fridge. So after my toes were dry, I got started on it.

Onions and celery

Squash and zucchini

Can of diced tomatoes, shredded carrots, frozen corn and frozen peas

One can each of dark red kidney beans and great northern beans

Mix altogether and add chicken broth

After cooking on low for a few hours, I added pasta and spinach.

He’s ready to go for the week! :lol:

I ate the last of my pizza for lunch and had a little adult beverage. :tounge:

Then, I got to work making more scones.

  • 1 stick of butter (frozen and shredded)
  • 1/2 cup skim milk
  • 1/2 cup low fat sour cream
  • 2 cups wheat flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • berries of choice (I used my mulberries)

Mix flour, sugar, baking powder, baking soda and salt together in a mixing bowl. In a small bowl whisk sour cream, milk and vanilla together.

Mix grated frozen butter into flour mixture with your hand. Then add milk mixture and gently mix with spoon. Just until everything is mixed.

Dump dough on floured surface and knead a little. Then roll out until about an inch thick.

Put berries on one half of dough and fold other half over them. Put on baking sheet covered with parchment paper (keeps it from sticking to the pan).

Top with more berries and cut into triangles and separate slightly.

Bake at 425°F for 20 minutes. Perfection! :grin:

Once the scones were done, I did a little cleaning up. About 2-ish, Pearl claimed it nap time. Who am I to argue with Pearly about a nap?

So we snoozed…FOR 3 HOURS! Wow!! LOL! When we were good and awake, we all headed out to mow the yards. The girls “helped” while eating their treats. :wink:

For dinner tonight I tried out my jerk seasoning that my Dad brought me back from Jamaica. We had grilled jerk chicken. I just brushed a little of the seasoning on while the chicken grilled (it’s a wet seasoning). I also baked sweet potatoes for 2 hours in the oven, cooked asparagus in Italian dressing and eggplant on the grill.

It was AWESOME! So tasty! :tounge:
