Today started out so beautiful…NOT! I’m so tired of rain.
It did eventually clear up though. Can you see the big rocket sticking up out there? That’s NASA.
I split a yummy breakfast burrito with Lacie this morning. It’s so amazing to want to eat again! Yesssss! In this masterpiece: eggs, cheese, hash browns and mushrooms. Add a little sour cream, salsa and hot sauce with coffee on the side. Viola!
We took my Dad out for dinner last night, his choice. He picked a little Mexican restaurant we used to always go to when my Mom was still here. YUM! So, for lunch today, I had leftovers from last night…chicken and beef fajitas (there were shrimp too but my Dad ate them all). There was a smig of beans and rice too and two corn tortillas.
I got in a quick workout at about 3-ish, 35 minutes on the elliptical. Little snack to tide me over until dinner (so yummy)…
…then I headed home to get cleaned up and get ready to head over for dinner with my in-laws. My brother-in-law is home from Afghanistan (he heads back tomorrow), so we had a going away dinner to wish him well on his journey back.
My plate! Now that I’m doing the Scale Back Alabama program, looking at this plate, holy carbs batman!! At least I did keep my portions really small. It helped that the plates we small too.
I waited about 20 minutes after I finished my first plate and realized I was in fact still a little hungry. So, I went back for a little seconds.
Roughly an hour or so later, I had a couple small slivers of cake and a small spoon of peach cobbler. Kinda wish I had just had a bigger scoop of cobbler and skipped the cakes. It was amazing! YUM!
